Breakfast

A delicious breakfast bowl of oatmeal topped with raspberries,
cinnamon, chia seeds, and roasted coconut flakes.

I met mom after work on Wednesday for a quick catch up over some shopping and dinner, and she spoiled me with some early birthday presents. One of my big interests is health and exercise, I love browsing health food stores full of interesting organic products, so I had fun picking out some stuff at a health food store with mom. I got organic roasted coconut flakes, and organic cacao nibs (ground up cocoa beans).

I topped my oatmeal the other day with the coconut flakes, and yesterday morning I added some cacao nibs too, it was delish! If you can get your hands on this stuff – try it!

Fried apples with honey roasted walnuts

Here’s a fashtastic and healthy treat I made last night.

Fried apples topped with raspberries & honey roasted walnuts
1 apple
1 tsp coconut oil
Juice of 1/2 lemon
Cinnamon
Pumpkin pie spice
Pure vanilla powder
A handful of walnuts
1-2 Tbs honey
Raspberries

How to: Heat some cocnut oil in a pan, slice your apple thinly and place slices in heated pan. Fry for a couple of minutes until the apples start to soften, then squeeze lemon juice over and add a dash each of cinnamon, pumpkin pie spice, and vanilla. Once it’s all combined and the apples are as soft as you would like them, remove them from the pan. Now, lightly roast the walnuts in a pan with a tablespoon or two of honey for a couple of minutes. Serve on a plate or in a bowl finished off with a couple of fresh or frozen raspberries (you can top it with a dollop of cream or ice cream too if you want). Yum!

How do you start your day?

My friend Anna is following a week-by-week question series called Let’s Write (created by blogger Mumma in Heels) intended as a way for your readers to get to know you a little bit better. I thought I’d hop on the bandwagon (at least for this week).

This weeks question is: How do you start your day?

I get up early every day, even on my days off. My alarm usually goes off around 6.30 or 7am and because I always place my cell phone (i.e. my alarm clock) at a distance, I have to get out of bed to turn it off. Once I’m up I either throw on my workout clothes and go out for a walk for 30-45 minutes before coming home and making breakfast, or (on the days when I’m feeling particularly unmotivated or tired) I get straight to making breakfast.

As far as breakfast goes, I get into a routine with a certain breakfast and then I eat the exact same thing every day for months on end (I think it’s only natural since my brain can’t handle coming up with a new breakfast every morning at that hour). Right now I eat oatmeal with berries for breakfast, with an apple and a cup of coffee on the side, and it tastes just as heavenly every single morning. Following breakfast I usually spend some time catching up on blogs, Facebook and the like and then get going with the rest of my routine (makeup, get dressed for school or the gym, etc.) depending on what’s on the agenda for the day.

When your google reader is nearing 400 new posts …

I feel like I say the same thing every week, but I’ve been busy ya’ll. I don’t even have time to procrastinate by scrolling through my google reader like I usually do, I’m behind by like 400 posts. I don’t know what it is but these past couple of weeks things have just been going non-stop. So, to sum things up, here’s a couple instagrams of what’s been up lately (p.s must get better at snapping photos regularly now that instagram makes it so easy and fun!)

My week

On the left: the changing room where I go and do personal training, wonderful! I had a great workout this week (as always). And ended up staying and chatting with my trainer for about half an hour after my workout. On the right: finally got my key card to my new gym so I’ve ben running over there every chance I’ve got this week.

My week

I went to a lecture about training and nutrition on Tuesday evening, I invited along my friend Anna who I met at surf camp a couple of years ago, it was great to see her again! The lecture was very interesting and we got nice goodie bags to take home that included some products from my favorite Kiehl’s.

My week

I’d say the majority of my time these past weeks has been spent with my nose in my course literature and working on my group project, assignments, workshops and prepping for pop-exams. Yesterday I finally found the time to paint my nails while waiting for my laundry to dry (multitasking like a pro).

My week

Today is my only day off, so I’m trying to enjoy the day as much as I can (which includes studying and catching up on to do’s). I made a visit to the gym this morning, and finally got a router for my internet (which I then spent 2,5 hours configuring before it finally worked properly, piece of crap). I also ran into a shop today that I’ve passed several times and meant to peek into because it looks so cute, it’s a candy shop but the only thing I bought was a bag of all natural dried apple chips (probably the healthiest thing in the store).

I’ve just enjoyed an afternoon snack of macarons (licorice and caramel, the caramel won), fresh raspberries and the obligatory cup of coffee. Tonight I’m going to watch Winter’s Bone and chill. I need to get mentally prepared for my big day tomorrow, it’s my first day trying out at a new job.

Next weeks agenda so far includes group work, lectures, work on assignment, a friend coming over for dinner, personal training, gym workouts, dinner out with a classmate for her birthday and another day at the new job.

Vacation Snapshots Part 2

Some more pictures from my vacation…

One evening after dinner we went to a cupcake shop called Zillycakes (it’s on Elmwood avenue). My grandparents and I each chose a cupcake and topping and they made them for us on the spot. I chose a mini rootbeer cupcake with chocolate meringue buttercream frosting.

Of course I did a bit of shopping too… more about that later.

And sipped a couple of Tim Horton’s iced coffee. Coffee at most coffee shops in the US is way too weak for me, which is why I often buy Starbucks (even though it is crazy expensive and my relatives always glare at me when I spend my money there), but it’s the only coffee that really even tastes like coffee. Tim Horton’s iced coffee tasted like water with milk to me.

I hung out with my lovely cousin at her boyfriend’s parents lake house in Maine. It was a beautiful place. I also hung out with my other cousin, he’s seen in one of the photos in my previous post from Diana’s Baths.

Threw on my bikini and went to the beach a couple of times. Or drove over to my other aunts place and swam in her pool.

Picked lots of blueberries. I picked 7,5 lbs (3,4 kg) to be exact. And we were only at the blueberry picking place for about 15 minutes.

American blueberries are so much easier and more fun to pick than Swedish ones.

I also picked raspberries at my grandfather’s friend’s place. They tasted like summer.

One thing I love about being in the US in the summer is all the fresh fruit and vegetables. We got lots of fresh fruit at farmer’s markets or fruit stands along the road. Fresh peaches, raspberries, blueberries, sweet corn on the cob, plums, watermelon, grapes, cherries… I was in heaven!

One evening I baked my “famous” pie. It’s a pie I make at the hospital often and it’s always a favorite. This one I filled with fresh picked peaches and blueberries. It was a winner.

The Road Trip

Yesterday my mom, sister and I spent the whole day together. We had what my mom called a “road trip” planned. We didn’t go that far, even though we drove a lot. It was a fun day and I had my DSLR along with me so I took the opportunity to play around with taking photos. Here’s what I saw, and did.

We started out by driving out to Stavnäs to find a place to eat lunch.

We stopped at Bageriet and eyed the menu and the nice sandwiches in the display.

We decided this was a good place to eat. It was cosy and there were books all along the walls.

We sat by the window to eat.

After lunch comes… coffee and lunch-dessert. I had a minibiskvi that was filled with dark chocolate

My sister opted for a classic chocolate ball.

Then we took a little walk and saw what we saw, before hopping in the car and continuing our ride.

We stopped along the road to buy fresh raspberries and strawberries

And then continued down the road

We saw a sign for a garage sale, so we had to stop and do some thrifting. I found a great cinnamon shaker.

We made a quick stop at the gas station and my sister and I decided we needed something to nibble on in the car. Peanut M&M’s are the perfect car-nibbling-snack.

I love horses, always have and always will. I made mom stop the car so I could take a picture of two of the many horses we passed along the way.

I also couldn’t help photographing pretty flowers all along the way.

Then we drove to Gustavsberg and peeked into some cute shops. The road blocks were painted in happy colors.

At the iittala outlet I looked at pretty plates, bowls and mugs.

And then it was time for some more coffee but this time we had it to go. I liked the photos on the wall at the café.

After a stop for some groceries, we steered the car home and fired up the grill. I made a pretty salad to go with dinner.

After dinner we had strawberries and mom’s homemade brownies (they’re the best)

Today I’m meeting my two friends B and S and we’re heading out to Fjäderholmarna for another whole-day activity. And the sun is finally out!
