Bread rolls

I’m at it again! This morning I baked bread rolls filled with zucchini, carrots and apple.

Now I’m heading in to town to meet Malin for lunch, the weather is crazy and I’m in a bad mood but Malin has promised to fix that with a dose of juicy gossip.

    YUM!! Do you have a recipe for those? I actually have zucchini and apple and carrots in the fridge right now- I want to make some!!

      Here’s the recipe for you (I’ve only got it in metric measurements):

      25g yeast (NOT dry yeast!)
      5dl water
      1 large carrot (grated)
      1 small/medium zucchini (grated)
      1 peeled and grated apple
      1.5 tbs salt
      1 tbs honey
      2 tbs olive oil
      14dl flour

      How to:
      Crumble the yeast in a large bowl, heat the water until warm to the touch and pour a little of it over the yeast and let it dissolve. Then add the rest of the water, the grated carrot, zucchini and apple plus the honey, salt and olive oil. Mix and then start adding the flour until you’ve got a dough. Let rise for 1 hour in the bowl covered with a clean towel. Preheat oven to 250C. Dust your table top with flour and divide your dough into 10-12 pieces (depending on how big you want them). Roll into buns or roll them long and then twirl them into a bun. Bake in the oven for about 10-12 minutes until golden brown on top!
